Achara is a Filipino pickle that can be made using any type of vegetable. The most common variation uses green papaya. In Sri Lanka, this is known as acharu and it can be as spicy as you like. Achara also can be used to pickle seafood or semi-cook it.

Ingredients

Quantity Ingredient
500ml chilli cane vinegar
500g white sugar
1 small white radish, peeled and cut into julienne
1 carrot, cut into julienne
1 small green papaya, peeled and cut into julienne
4 long red chillies, seeds removed and cut into julienne
50g ginger, cut into julienne
garlic, blanched and bruised

Method

  1. Place the vinegar and sugar in a saucepan over low heat, stir until the sugar dissolves and bring to the boil.
  2. Remove from the heat and leave to cool.
  3. Add the remaining ingredients, stir to combine well and leave for at least 10 minutes. Drain, discarding the liquid, and refrigerate until ready to serve.
