I love the colour and flavour of beetroot. This is a vibrant salad with a hint of spice.

Ingredients

Quantity Ingredient
400g sliced beetroot, drained
1 tomato, finely diced
1 onion, finely diced
1/2 green capsicum, finely diced
1 tablespoon lime juice
garlic, minced with a pinch of salt
1 teaspoon grated palm sugar
salt, to taste
1 tablespoon ground black pepper

Method

  1. Arrange the beetroot on a serving platter and scatter over the tomato, onion and capsicum. Combine the lime juice, garlic and sugar and stir until the sugar is dissolved. Season with the salt and pepper, then drizzle over the salad.
