This is a great vinaigrette for raw fish or a grilled fish salad. Try it in the raw trevally salad with pomegranate.

Ingredients

Quantity Ingredient
2 limes, juiced and finely grated zest
1 tablespoon fish sauce
1 teaspoon soy sauce
50g soft brown sugar
2 long red chillies, finely chopped
garlic, minced
1 french shallot, finely chopped
1 bunch coriander, minced, roots only
1 spring onion, finely chopped
ground black pepper, to taste

Method

  1. Place the lime juice, fish sauce, soy sauce and sugar in a bowl and stir to dissolve the sugar. Add the remaining ingredients, season with pepper and mix well. Set aside until needed.
