Best ever minty breakfast smoothie

It’s a bold claim, but the delicately fragrant flavour of the cardamom next to the cool and energising zing of mint really is the perfect morning combo. You can play around with whatever fruit you want to add, but I like the sweetness of overripe mangoes and strawberries, which feel like they wake you up soothingly.

Ingredients

Quantity Ingredient
1 overripe mango
100g ripe strawberries, hulled
2 sprigs mint, leaves only
2 cardamom pods
200g low-fat natural yoghurt
1 tablespoon agave syrup
or 1 tablespoon runny honey

Method

  1. Peel and chop the mango, removing and discarding the stone and skin. Put the mango flesh into a food processor with the strawberries and mint leaves and blitz to a purée.
  2. Carefully insert the tip of a sharp knife into one end of the cardamom pods and use the knife to split them open. Discard the pods and add the cardamom seeds, yoghurt and agave or honey to the food processor. Blitz again until combined.
  3. You will end up with about 500 ml of smoothie. Divide between 2 glasses and drink immediately.

Sbstitute the mint with...

  • Lemon thyme, lemon balm or sorrel.
