Argentinian caramel biscuit sandwiches

Alfajores are a popular treat throughout South America. There are countless variations, depending on region. Essentially they are made of two delicate buttery biscuits which are used to sandwich a filling, most commonly dulce de leche or Argentinian caramel sauce. They are then rolled in coconut or nuts, dipped in white or dark chocolate, coated in meringue or dusted with icing sugar. Alfajores are also found triple-layered or filled with jam or chocolate nut spread.

Ingredients

Quantity Ingredient
1 1/2 cups cornflour, plus extra for rolling
1 cup plain flour
1/2 cup icing sugar, plus extra for dusting
225g unsalted butter, melted and cooled, plus extra for greasing
1 quantity Dulce de leche
1 cup desiccated coconut, for rolling

Method

  1. Preheat the oven to 180°C. Lightly grease two baking trays with a little melted butter.
  2. Sift the cornflour, flour and icing sugar together in a medium-sized bowl. Pour in the melted butter and stir to combine. Turn out onto a clean work surface and knead to form a soft dough.
  3. Lightly dust the work surface with a little extra cornflour and use a rolling pin to roll the dough out to a thickness of 1 cm. Use a 6 cm round pastry cutter to cut out circular rounds — you should make about 24 in total.
  4. Arrange the rounds on the prepared baking trays and bake in the oven for 10 minutes, or until they begin to turn golden brown on the edges. Remove from the oven and allow to cool on the trays for 10 minutes, before transferring to a wire rack to cool completely.
  5. Spread a thick layer of dulce de leche on half of the biscuits. Place the remaining biscuits on top and press down gently to secure. Roll the edge of the biscuits in desiccated coconut to coat, then lightly dust the tops with icing sugar.
  6. The biscuits can be stored in an airtight container in the refrigerator for up to 3 days.
