A German classic, this version was adopted by the Italians (the title translates as ‘in the style of Milan’), and is commonly found in Argentinian restaurants. Essentially it is a thin slice of meat (it can also be made using beef, pork or chicken) which is breaded and shallow-fried. Traditionally, it is cooked in a frying pan but also develops a lovely crisp coating when cooked on the barbecue. Serve with Brazilian potato salad.

Ingredients

3/4 cup plain flour
4 cups fresh breadcrumbs
1 handful flat-leaf parsley, chopped
8 veal steaks, about 1 cm thick
3 large eggs, lightly beaten
1/4 cup olive oil
60g butter
lemon wedges, to serve

Method

  1. Place the flour on a large plate and season with sea salt and freshly ground black pepper. In a separate bowl, combine the breadcrumbs and parsley.
  2. Coat the veal steaks first in the flour, then in the egg and finally in the breadcrumb mixture, pressing lightly to coat each steak.
  3. Preheat a barbecue chargrill or hotplate to medium–high.
  4. Heat the olive oil and butter together in a small saucepan, until the butter has melted. Brush the chargrill with half of the oil mixture. Cook the crumbed steaks on one side for 3–4 minutes, or until golden-brown. Drizzle the remaining oil mixture on top of the steaks, turn and cook for a further 3–4 minutes, or until golden brown. Drain off any excess oil using paper towels and serve hot with lemon wedges for squeezing over and Brazilian potato salad on the side.
