Whole fish stuffed with farofa

Farofa is made from toasted manioc (cassava) flour. It is used in this dish as a stuffing for the fish, adding an interesting textural element and soaking up the cooking juices. Farofa pronto is a pre-seasoned ‘ready to eat’ version which can be purchased from Latin American food stores or online. It is a great time-saving alternative, just keep a bag of it handy in your cupboard and you’re good to go.

Ingredients

1.5kg whole snapper, barramundi or whiting, cleaned and scaled, head left on
3 lemons, juiced
2 tablespoons olive oil
farofa pronto or toasted farofa, for stuffing
Vinagrete, to serve

Method

  1. Place the fish on a non-reactive tray, pour over the lemon juice, drizzle with the olive oil and season with sea salt and freshly ground black pepper, including inside the cavity. Cover and leave to marinate in the refrigerator for 30 minutes.
  2. Cut a double layer of foil large enough to wrap the fish. Remove the fish from the marinade, place on the foil and stuff the cavity with farofa. Wrap the fish in the double layer of foil and seal to enclose. Place the fish on a closable wire fish barbecue grill, if you have one, and fasten shut.
  3. Preheat a barbecue chargrill to medium–high. Grill the fish for 6–8 minutes on each side, then remove from the heat and set aside to rest for 5 minutes.
  4. To serve, open up the parcel and gently lift out the fish and place on a serving plate. Serve with the leftover farofa and the vinagrete.
