Eggplants require salting before grilling to draw out any bitterness from the flesh. When cooked on the barbecue, the outside of the eggplant becomes slightly charred while the flesh becomes soft and creamy and gives the eggplant a slightly smoky flavour. The addition of oregano, salt and chilli for seasoning melds perfectly to make this side an ideal accompaniment to grilled meats.
