Not many meals in India would be complete without yoghurt in some form. This might be plain yoghurt, a raita or a sweetened yoghurt. Most Indian families set their own yoghurt at home, but a good-quality store-bought organic yoghurt is a perfectly acceptable alternative. The most popular of all raitas, cucumber raita, goes especially well with chicken curries. Make sure you remove the seeds from the cucumber or use a seedless variety. And any left-over raita will keep in the refrigerator for up to three days.

Ingredients

Quantity Ingredient
250g plain yoghurt
1/2 cucumber, peeled if desired and seeds removed, grated, (see note)
1 tablespoon onion, finely chopped
1/2-1 teaspoon salt, or to taste
1 teaspoon yellow mustard seeds, roasted and ground
2 teaspoons cumin seeds, roasted and ground
1/4 teaspoon red chilli powder

Method

  1. Put the yoghurt, cucumber, onion, salt and all but a pinch each of the yellow mustard, cumin and chilli powder in a small bowl. Mix together, then chill in the refrigerator for at least 20 minutes, or until ready to serve.
  2. Transfer the raita to a serving bowl, sprinkle over the remaining pinch of yellow mustard, cumin and chilli powder, and serve.

Note:

  • Raitas are meant to be of a pouring consistency – not too thick. But if you prefer a more solid texture and consistency, squeeze the grated cucumber between your palms to remove all the liquid from it before mixing with the yoghurt.

Variation:

  • To make a Spinach raita, heat 2 teaspoons of canola oil in a small frying pan and gently fry 50 g baby spinach with ½ teaspoon garlic paste and 1 whole red chilli until the spinach has wilted. Leave to cool, then transfer to a small bowl and add the yoghurt, stirring gently to combine. Season to taste, and chill for 20 minutes or until ready to serve.
