Dark green mint chutney is a refreshing, bold dipping sauce, which accompanies fried starters and tandoori kababs, or is used in chaat. Indian cooking depends on many extras, such as this one, to provide a clean, contrasting flavour. In India the term ‘chutney’ describes a wide range of accompaniments. It can include long-lasting chutneys in jars, other chutneys that are fresh and will keep for two to three months, and still others that are really dipping or accompanying sauces, such as this one. This chutney will keep in the refrigerator for up to four days.

Ingredients

Quantity Ingredient
50g mint leaves
1 lemon or lime, juiced
garlic
1 tablespoon sugar
1 teaspoon salt
2 green chillies

Method

  1. Process the mint, lemon or lime juice, garlic, sugar, salt and chillies with 125 ml water in a food processor to form a smooth paste.
  2. Chill the chutney in the refrigerator for 20 minutes, until the flavours have infused, or until ready to serve.
