Crisp-fried straw potatoes can be served with an Indian meal or they can be a component in a dish, such as Parsee lamb curry or akuri, the Parsee version of scrambled eggs.

Ingredients

Quantity Ingredient
vegetable or canola oil, for deep-frying
2 large potatoes, peeled and cut into matchsticks
1/2-1 teaspoon salt, or to taste

Method

  1. Heat the oil in a wok or deep-fryer to 200°C.
  2. Deep-fry the potato in small batches, stirring frequently with a slotted spoon, for about 8 minutes, or until golden brown and crisp. Remove from the oil with the slotted spoon and drain on kitchen towels.
  3. Sprinkle with the salt and serve hot or at room temperature.
