The modern pressure cooker is a boon to Indian cooking. While instructions for its use haven’t been included in the recipe methods in this book, it can reduce the cooking time of certain dishes by about 75 per cent.

Method

  1. You can use a pressure cooker to make the cooking of lentils, dried beans and chickpeas a quick and easy task. After any necessary soaking and rinsing, put the lentils, beans or chickpeas in the pressure cooker with the specified amount of water and cook for one-quarter of the time specified in the recipe, or until they are the required softness.
  2. Also consider using a pressure cooker for the lengthy tenderising part of cooking curries that use red meat on the bone, such as lamb shanks or beef or veal shanks (the cut of meat used for osso bucco); or secondary cuts of meat, such as lamb or goat forequarter or shoulder chops; or cheap stewing cuts of meat such as beef neck, chuck or brisket. Complete all the initial sautéing of onions, pastes and spices, browning of meat and stirring in of vegetables in a saucepan on the stovetop. Then transfer the mixture to the pressure cooker and simmer or cook gently for one-quarter of the time specified in the recipe, or until the meat is the required tenderness. If the curry needs to be finished with the addition of tempering, cream or any other ingredients, return the mixture to the saucepan, complete the final steps on the stovetop and serve. Otherwise, serve directly from the pressure cooker.
