Using an infusion of saffron threads in milk distributes the saffron flavour more evenly and strongly during cooking than simply adding the saffron threads to the pan. The infusion must be made fresh, so reduce the amount you make if the recipe requires less.

Ingredients

Quantity Ingredient
3 saffron threads
2 tablespoons milk

Method

  1. Gently heat the saffron and milk in a small saucepan over a low heat for 2 minutes. Remove from the heat and leave to stand for 20 minutes to let the flavour develop and intensify. Use as directed in the recipe.
