Bengal fish charchori

In Bengal, there are almost as many fish recipes as there are fish eaters (and almost everyone in the state eats fish). In my restaurant, this dish was one of the early favourites, a signature recipe that distinguished the Spice Kitchen from the ubiquitous ‘fish everyway’ served in other Indian restaurants. Charchori has come to refer to a cooking method where various ingredients are cooked together until each ingredient is almost indistinguishable and the dish takes on a unique flavour – much more than the taste of its many parts.

Ingredients

750g firm white fish fillets, such as snapper, morwong (deep sea bream), perch, mulloway, ling, cod or other meaty fish, cut into 7.5 cm pieces
2 teaspoons turmeric
1/2-1 teaspoon salt, or to taste
2 tablespoons mustard oil
1 teaspoon Panch Phoron
1 teaspoon Ginger paste
1 teaspoon Garlic paste
1 large onion, sliced
2 green chillies
8 small cauliflower florets
1 small red capsicum, sliced lengthwise
1 small green capsicum, sliced lengthwise
1 small yellow capsicum, sliced lengthwise
coriander leaves, to garnish

Method

  1. Put the fish in a large bowl. Sprinkle with 1 teaspoon of the turmeric and the salt to taste, and toss together until the fish pieces are well coated.
  2. Heat the mustard oil in a wok or large frying pan over a medium heat. When the oil is smoking, add the panch phoron, then immediately stir in the ginger and garlic pastes, onion and chillies. Immediately add the fish, cauliflower, red, green and yellow capsicum and remaining turmeric, and gently stir to coat.
  3. Cover the wok, reduce the heat to as low as possible and cook for about 15 minutes, or until the fish and vegetables are just cooked – the timing will depend on the type and thickness of the fish. Resist the temptation to open the lid and stir the mixture, as this will break up the vegetables and fish.
  4. Garnish with the coriander and serve hot.
