This is a wonderful dish for a light lunch or as a starter before dinner. Chaat is the word used for a mixture that has piquant, tantalising flavours with contrasting crisp, crumbly and soft textures, and is mainly vegetarian. In North India chaat is available from specialist cafés and street vendors, many of whom have a cult following. The ingredients used in this recipe combine to achieve an intriguing balance of contrasting and complementary flavours. It can be served hot or at room temperature.

Ingredients

800g firm white fish fillets, such as snapper, mullet, barramundi, mulloway, ling, cod, or other meaty fish, cut into 2.5 cm pieces
vegetable or canola oil, for deep-frying
2 medium cucumber, diced
1 red onion, chopped
1 teaspoon Chaat masala
2 lemons or limes, juiced
Tamarind and ginger chutney
Mint chutney

Marinade

Quantity Ingredient
2 tablespoons white vinegar
1 tablespoon Ginger paste
1 tablespoon Garlic paste
1 teaspoon chilli powder
1/2 teaspoon ground white pepper
1/2-1 teaspoon salt, or to taste
30g besan, (chickpea flour)

Method

  1. Put the fish in a large bowl. Sprinkle in the marinade ingredients one by one: the vinegar, ginger paste, garlic paste, chilli powder, white pepper, salt and besan. Toss to thoroughly coat the fish in the marinade, then cover and put in the refrigerator to marinate for up to 20 minutes.
  2. Heat the oil in a wok or deep-fryer to 180°C. Deep-fry the fish a few pieces at a time for about 2 minutes, or until crispy on the outside and the flesh flakes easily when pressed. Remove from the oil and drain on kitchen towels.
  3. Put the fried fish in a large serving bowl. Add the cucumber and onion and carefully toss through. Sprinkle with the chaat masala and pour over the lemon or lime juice.
  4. Drizzle with the tamarind and ginger chutney and mint chutney and serve immediately or at room temperature.
