These are super-moreish and quick to make. A firm favourite with the kids, they provide a generous and healthy snack and are very popular with adults, too! Adding a handful of chopped ham or pepperoni will satisfy the carnivores in your family.

Ingredients

Quantity Ingredient
1 small red onion, finely chopped, (80g)
1/2 red pepper, finely chopped, (80g)
80g mushrooms, finely sliced
1 tablespoon olive oil
80g canned or frozen sweetcorn
80g spinach, shredded
sea salt
freshly ground black pepper
2 large flour tortillas
2 tablespoons Mean balls with tomato sauce, (sauce only, or ready-made pizza sauce)
80g cheddar cheese, finely grated

Method

  1. Fry the onion, red pepper and mushrooms in the oil for about 10 minutes until softened and reduced in volume. Stir in the sweetcorn and spinach and cook until the spinach has wilted. Season with salt and pepper.
  2. Spread one tortilla with 1 tbsp of the pizza sauce, making sure it goes to the edges. Place in a dry, large non-stick frying pan over a medium heat. Sprinkle one-quarter of the cheese over half the tortilla and lay half the filling on top. Sprinkle another one-quarter of the cheese on top and fold the tortilla over to create a semi-circle. Fry on each side for two or three minutes until golden and the cheese has started to melt.
  3. Remove from the pan and allow to cool a little while you cook the other tortilla. With a serrated knife, carefully cut each semi-circle into three triangles and serve.
