Our hearty and substantial curry soup recipe is a meal in itself; it’s delightfully colourful and has warm, subtle spicing. Great on its own or served with naan bread.

Ingredients

1 small carrot, roughly chopped, (80g)
2 small celery sticks, roughly chopped, (80g)
1 garlic clove
1 tablespoon sunflower oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 medium onion, finely chopped, (160g)
1/2 red pepper, chopped, (80g)
small bunch coriander, stalks finely chopped and leaves roughly chopped
sea salt
freshly ground black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 teaspoon chilli powder
90g red lentils, (yields about 160g when cooked)
100ml coconut milk
500ml vegetable stock
2 large handfuls cherry tomatoes, (160g)
80g baby spinach

Method

  1. Finely blitz the carrot, celery and garlic in a food processor.
  2. Heat the oil in a heavy-based saucepan, add the cumin and mustard seeds and cook for about 30 seconds or until the mustard seeds start to pop. Add the onion, red pepper and coriander stalks to the pan with a little salt and cook for about eight minutes until soft.
  3. Add the dry spices, the carrot and celery mixture and continue cooking for a further five minutes, adding a little water if the mixture threatens to catch.
  4. Rinse the lentils thoroughly and add to the pan with the coconut milk and stock. Cook for 20 minutes or until the lentils are soft, topping up with hot water if necessary to reach your preferred consistency.
  5. Add the cherry tomatoes and cook for about two minutes until just softened, take off the heat and stir in the spinach and coriander leaves, which will wilt in the residual warmth. Season with salt and pepper.
