This mousse will surprise and delight you, so don’t be put off by the inclusion of chickpeas! The dark chocolate and orange provide a rich flavour and texture.

Ingredients

Quantity Ingredient
400g can of chickpeas, drained and rinsed, (net weight 240g)
150ml orange juice
150g dark chocolate
80g runny honey
2 tablespoons cointreau, (optional)
3 small oranges, (240g)
6g powdered gelatine
20 raspberries

Method

  1. Place the chickpeas in a food processor and add the orange juice. Blend for three to four minutes until the mixture is as smooth as you can manage.
  2. Melt the dark chocolate in a heatproof bowl over a pan of simmering water (the bowl must not touch the water). Pour the honey into the melting chocolate. Once fully melted, pour the chocolate mix into the food processor and add the Cointreau (if using). Blend for two minutes.
  3. Remove the peel and pith from the oranges and slice them, taking care to remove any pips. Add to the food processor and blend again for a further two minutes.
  4. Dissolve the gelatine in 50ml boiling water by whisking vigorously. Add to the food processor and blend for a final two minutes.
  5. Divide the mixture between four 200ml ramekins and leave in the fridge for two or three hours to set.
  6. Serve with five raspberries on each dish.
