A really light, refreshing dip and extremely easy to make. Our tzatziki recipe uses carrot and cumin as well as cucumber to make an unusual but really colourful and tasty dip.

Ingredients

Quantity Ingredient
300g greek yogurt
1 medium carrot, coarsely grated, (80g)
1/4 cucumber, deseeded and grated, (80g)
2 garlic cloves, crushed
large handful mint leaves, finely chopped
1 unwaxed lemon, finely grated zest and juiced
1/2 teaspoon ground cumin
1 tablespoon olive oil
sea salt
freshly ground black pepper
crudites or warm pitta breads, to serve

Method

  1. Place the yogurt, carrot, cucumber, garlic and mint into a bowl. Add the lemon zest and sprinkle over the cumin. Mix well and finish with some lemon juice, olive oil, salt and pepper to taste.
  2. Serve with crudités or warm pitta.
