A very versatile chilli dip which gives you another portion of your five-a-day while spicing up any kind of snack. Alternatively add a tablespoon or two to any dish to give it an extra kick.

Ingredients

Quantity Ingredient
4 large tomatoes
2 teaspoons tomato puree
1 tablespoon tomato ketchup
1 green chilli, finely chopped
1/2 small onion, finely chopped
2 tablespoons finely chopped coriander
1/2 teaspoon cumin seeds
1/2 teaspoon ground cumin
good squeeze lemon juice
sea salt

Method

  1. Score a cross in the base of each tomato, then place in a bowl and cover with some boiling water. Leave for two minutes before draining and slipping off the skins. Remove the seeds from the tomatoes and blitz with the purée and ketchup in a small food processor.
  2. Stir the chilli, onion and coriander into the tomato mixture with the cumin seeds, ground cumin, lemon juice and salt.
  3. This keeps in the fridge for three days in an airtight container.
