These are delicious and are a really convenient way to up your five-a-day on the go. They’re perfect for the kids to snack on, too. Make enough houmous for the week ahead; that way there’s always something healthy at hand.

Ingredients

Quantity Ingredient
1 red pepper, sliced, (160g)
1/2 yellow pepper, sliced, (80g)
1 small red onion, cut into bite-sized pieces, (80g)
a little olive oil
2 heaped tablespoons Houmous with clutch bag crudites, (houmous only)
2 large seeded wraps
1 large avocado, sliced, (160g)
5cm piece of cucumber, sliced, (80g)

Method

  1. Preheat the oven to 200°C. Toss the peppers and red onion in the oil and roast for about 25 minutes, or until soft.
  2. To assemble the wraps, spread half the houmous over each wrap. Place half the roasted vegetables, avocado and cucumber in the middle of each. Roll up the wraps, tucking in the sides as you go. Cut at an angle and serve.
