I like to make my guacamole with a mortar and pestle and a wooden spoon. I leave small chunks of avo in the mix, and little pieces of white onion to give it a little crunch, too.

Ingredients

Quantity Ingredient
1 quantity Corn chips

Guacamole

Quantity Ingredient
1/2 white onion
1/2 teaspoon sea salt
1 garlic clove
3 large, ripe avocados, stoned
handful coriander leaves and stems, finely chopped
lime juice, to taste
finely ground black pepper

Method

  1. For the guacamole, finely dice half of the onion and set aside.
  2. Using a large mortar and pestle, work together the sea salt, garlic and the remaining onion into a paste. Add the avocados and smash with the back of a wooden spoon until the avocado is mashed but still a little chunky.
  3. Add the diced onion, coriander, a squeeze of lime juice and black pepper to taste. Combine well and serve with the corn chips.
