These are my three favourite sauces to have with fries. Annie is the person who makes all the tomato relish we use in the trucks. The original recipe was given to her in ’74 and has stood the test of time. Toum is a ‘gangster garlic dip’ – you must show respect. Add the oil too fast and it will split. Take your time and drizzle in the oil nice and slow, in a stream no thicker than a piece of dried linguine. The white sauce reminds me of eating fries with salt and vinegar as a kid. It also goes great with grilled chicken.

Annie’s tomato relish

Quantity Ingredient
1kg ripe tomatoes
2 large brown onions, chopped
1 tablespoon salt
700ml malt vinegar
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon ground fenugreek
1/4 teaspoon ground fennel seed
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground black pepper
340g sugar
2 teaspoons sago
2 kaffir lime leaves
2 teaspoons mustard powder

Method

  1. To make Annie’s tomato relish, scald the tomatoes with boiling water, then put them under cold running water and rub off the skins. Chop the tomatoes and combine them with the onion in a bowl. Sprinkle with the salt and let stand overnight. The next day, drain the liquid.
  2. Transfer the drained tomato mixture to a saucepan. Add the malt vinegar and bring to the boil over medium heat. Cook for 15 minutes, then add the remaining ingredients and boil for a further 45 minutes.
  3. Remove the saucepan from the heat and use a hand-held blender or a food processor to blitz the relish to your desired consistency. Bottle in sterilised jars while the relish is hot. Let cool at room temperature, then refrigerate. Makes 1 litre.

Toum

Ingredients

1 garlic bulb, peeled
1 tablespoon salt
500ml grapeseed oil
80ml lemon juice

Method

  1. To make the toum, pulse the garlic with the salt in a food processor until roughly chopped. With the motor running, add 125 ml of the oil in a slow, steady stream. The garlic will begin to emulsify.
  2. With the motor still running, drizzle in 1 tablespoon of the lemon juice.
  3. Slowly add another 125 ml of the oil, then another 1 tablespoon of the lemon juice. Repeat with the remaining oil and lemon juice until well combined.

White sauce

Ingredients

60g mayonnaise
60ml apple cider vinegar
2 teaspoons cracked black pepper
pinch cayenne pepper
1 teaspoon lemon juice

Method

  1. To make the white sauce, whisk together all of the ingredients.
  2. Serve the three sauces with hot fries.
