Ingredients

Quantity Ingredient
2 cardamom pods
2 teaspoons ground cardamom
500ml milk
375ml vanilla ice cream
1 teaspoon malt extract

Method

  1. Bruise the cardamom pods then combine them with the ground cardamom and milk in a heavy-based saucepan. Bring to the boil then simmer over a low heat for 3–4 minutes. Transfer the milk mixture to a bowl and let it cool slightly, then cover with plastic wrap and refrigerate for 1–2 hours.
  2. Strain the cooled milk mixture and whiz in a food processor with the ice cream and malt extract until thick and well combined.
  3. Serve over ice.
