Left-over corn tortillas are best turned into chips. It’s best to use day-old tortillas.

Ingredients

Quantity Ingredient
1 quantity Corn tortillas
canola oil, for deep-frying
or cottonseed oil, for deep-frying

Method

  1. Cut the tortillas into your desired corn chip shape.
  2. In a deep-fryer or heavy-based saucepan, heat the oil to 175–180°C, or until a cube of bread dropped into the oil turns golden brown in 15 seconds.
  3. Fry the tortilla pieces for about 1 minute, or until crispy. Be careful not to overcook as they will become bitter.
  4. Serve with your favourite dip.
