Ingredients

Quantity Ingredient
100g vegetable shortening or copha, cut into smallish chunks
500g plain flour
10g salt

Method

  1. Combine the ingredients in a food processor. With the motor running, slowly add 250 ml warm water. Once the dough has come together, check the consistency. It should be the consistency of Play-Doh. If it’s a bit sticky, add a touch more flour; if it’s a bit dry, add a touch more warm water.
  2. Portion the dough into 20 equal-sized balls. Cover with a clean tea towel and let them rest for 30 minutes.
  3. Lay a piece of baking paper on a flat working surface and put a ball of dough in the centre. Cover with more baking paper, then roll out with a rolling pin to create a tortilla about 11 cm in diameter.
  4. To cook the tortillas, heat a non-stick frying pan over low–medium heat. Cook the tortillas for 1 minute on each side, or until the dough is cooked through. Transfer to a plate and cover with a damp, clean tea towel to keep warm. Repeat with the remaining dough balls.
