Salted yoghurt drink

Ayran is a light, seriously refreshing, slightly salted yoghurt drink, a little bit like Indian lassi. It is drunk with everything and at all times of day, particularly with meals in restaurants where alcohol isn’t served. For extra coolness, add a few ice cubes to the blender.

Ingredients

Quantity Ingredient
240ml plain turkish or greek-style yoghurt
240ml well-chilled water
1/2 teaspoon salt, or to taste

Method

  1. Pour the yoghurt and water in a blender and season with the salt. Blitz until foamy. Pour into chilled glasses and serve. Alternatively, whisk the ingredients together with an electric or balloon whisk.
