Watermelon and ginger juice

A refreshing drink with a little kick, this is perfect for a hot summer day. Watermelon juice makes a great base for cocktails too – just add a shot of vodka or rum.

Ingredients

Quantity Ingredient
1/2 watermelon, chilled in the fridge
5 cm piece fresh ginger, peeled
ice cubes, to serve (optional)

Method

  1. Deseed the melon, remove the rind and chop into chunks. Blitz in a blender. Slice the ginger into strips and crush lightly in a pestle and mortar or with a rolling pin. Add to the watermelon pulp, including any ginger juice, and stand for 10 minutes.
  2. Using a sieve and pressing through with the back of a spoon, if necessary, strain the juice into glasses and add ice, if you like.
