In Turkey figs are often used when they are green, to make delicious preserves. It’s very hard to get unripe figs in the UK, unless you have access to your very own tree, so try this salad which uses, plump, sweet, ripe ones.

Ingredients

Quantity Ingredient
4 ripe figs
100g feta, crumbled into pieces
16 mint leaves

Method

  1. Quarter the figs. If serving as a starter, put 4 pieces on each plate. Alternatively place all the fig quarters in a shallow serving bowl. Scatter over the cheese and mint leaves. Serve immediately.
