We’re often served bowls of wilted bitter greens like dandelions in our favourite Istanbul restaurants and, back in London, rocket is a good substitute. Cooking enhances its strong, sharp and peppery notes.

Ingredients

Quantity Ingredient
300g rocket
knob butter
1 fresh red chilli, deseeded and finely chopped, (or to taste)
1 teaspoon lemon juice
salt
freshly ground black pepper

Method

  1. Wash the rocket and shake off excess moisture. Melt the butter in a large saucepan set over a medium heat. When the butter is foaming, add the wet rocket. Stir until wilted – this will take just a couple of minutes. Remove from the heat, drain the liquid from the pan, and add the chilli, lemon juice and a little salt and pepper. Serve hot alongside meat or fish.
