Feta baked in the oven

Use ripe in-season peppers and tomatoes for this colourful dish, which makes a lovely vegetarian supper or quick sharing platter for a starter or meze, served with warm wholemeal bread or Flatbreads.

Ingredients

Quantity Ingredient
olive oil, for the dish
1 large tomato, finely sliced
1/2 red or yellow pepper, finely sliced
pinch salt
100g feta
pinch sweet paprika
pinch chilli flakes, or to taste

Method

  1. Preheat the oven to 200ºC. Oil a baking dish.
  2. Spread the sliced tomato and pepper out in the dish, toss in the oil and salt, and place in the oven for 5 minutes.
  3. Remove from the oven and top with the feta cheese, broken into large chunks. Sprinkle with the paprika and chilli flakes and return to the oven. Bake for 15 minutes.
  4. Serve immediately, drizzling over the pan juices before eating.
