Stir-fried pork and snowpeas

Ingredients

Quantity Ingredient
250g lean pork
250g snowpeas
2 tablespoons dried prawns
1-2 tablespoons oil
1 garlic clove, smashed and chopped
1 teaspoon sugar
1 tablespoon oyster sauce
1/2 teaspoon fish sauce
or 1/4 teaspoon salt
1 tin straw mushrooms
a few quail eggs, boiled and shelled, (optional)
1/4 cup cashew nuts

Method

  1. Remove membrane from meat, cut into 5 cm strips and slice finely across the grain. Trim snowpeas. Wash dried prawns. Heat oil in pan, put in the garlic and the meat and stir-fry for a moment. Add sugar, oyster sauce and fish sauce or salt. Add snowpeas and stir, then drain and add whole mushrooms, whole quail eggs if you are using them, dried prawns and cashew nuts. Stir-fry until everything is cooked.
  2. Different combinations may be used in this recipe – sometimes just snowpeas, sometimes only snowpeas and cashews, and so on.
