Sharkfin with scrambled egg

Ingredients

Quantity Ingredient
3 tablespoons vegetable oil
2 teaspoon chopped fresh ginger
1/2 small brown onion, chopped
80g lean ham or chinese roast pork, shredded
125g crab meat
125g shredded bamboo shoots
125g prepared sharkfins, in water for 20 minutes and then drained
4 eggs, beaten lightly
chopped spring onions or coriander leaves

Method

  1. Heat the oil in a frying pan. Fry the ginger and onion until light brown. Add the pork, crab meat, bamboo shoots and shark fins, and stir-fry until well mixed. Add the beaten eggs and, when they start to set, scramble gently until well amalgamated but not dry. Garnish with chopped spring onion or coriander leaves.
