Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 garlic cloves, smashed and chopped
150g pork chop meat, finely sliced
300g snakebeans or stringless beans, cut into 2.5 cm lengths
salt, to taste

Method

  1. Heat the oil until it is hot. Fry the garlic until light brown, then add the pork, stirring until it changes colour. Add the beans and salt and stir until the vegetable is lightly cooked but not soft. Add a dash of water and cover the pan if you prefer a slightly moister dish, but this is not really necessary.
  2. Almost any vegetable may be cooked this way – beansprouts, Chinese cabbage, English spinach, snowpeas or zucchini, to name only a few – and you can use shelled and deveined raw prawns instead of pork.
