Ingredients

Quantity Ingredient
3 cardamom pods
3 cloves
2.5cm piece cinnamon bark
2-3 brown onions, chopped
2 tablespoons ghee or vegetable oil
4 garlic cloves, smashed and chopped
4 thin slices fresh ginger, smashed and chopped
500g leg mutton, cubed
1 1/2 tablespoons meat curry powder
salt
1 tomato, peeled and chopped

Method

  1. Break the cardamom, cloves and cinnamon roughly in a mortar or a food processor attachment. Fry the chopped onions in hot ghee until they are soft. Add the garlic and ginger and fry until they smell cooked. Put in the meat and brown it, then the curry powder, cardamom, cloves and cinnamon. Stir well to mix, add salt and a little water. Cook for a few minutes on a high heat, then turn the stove low and simmer, covered, until the meat is half cooked (about 30 minutes). Add the tomato, finish cooking and serve.
