An excellent breakfast dish on a morning after a party as well as a good dish to serve with stir-fried vegetables for a quick family meal.

Ingredients

Quantity Ingredient
4 eggs
1 teaspoon javanese soya sauce, (optional)
2 tablespoons vegetable oil
4 shallots, finely sliced
2-3 red chillies, seeded and finely sliced

Method

  1. Lightly beat the eggs with the Javanese soya sauce and a little water. Heat the oil in a pan, fry the shallots and chillies until soft. Pour in the egg and allow it to half set. Then proceed as you would with a French omelette: either run channels through it gently with the flat tip of a knife or lift the edges of the setting omelette and tilt the pan so that the remaining liquid comes into contact with the hot pan. When completely set, allow to fry until the omelette is golden brown on the bottom.
