Stir-fried cabbage with egg

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil or butter, if preferred
1 garlic clove, smashed and chopped
1 large brown onion, cut in two across and then sliced finely lengthwise
400g cabbage, finely shredded
salt and pepper, to taste
2 small eggs

Method

  1. Heat the oil in a wok and stir-fry the garlic and onion until they are soft. Add the cabbage and salt and pepper and stir-fry until cooked but not soft. Now pull the cabbage aside and break the eggs into the centre of the pan. Break the yolks and stir the eggs only with the edge of the spatula until the white and yolk are amalgamated. When the egg begins to set on the bottom stir everything together well, allowing the egg to cook and mix through the cabbage. Do not overcook.
