Stir-fried vegetables of your choice

Ingredients

Quantity Ingredient
3 tablespoons vegetable oil
5 shallots
or 1 brown onion, finely sliced
2 garlic cloves, smashed and chopped
2-6 chillies, seeded and sliced diagonally
2 thick slices galangal, bruised
or 1 teaspoon galangal powder
2 salam leaves
3 cups vegetables of any kind
a dash soya sauce
or A pinch salt
splash water or chicken stock, (optional)

Method

  1. Heat the oil in a wok or a pan and fry the shallots, garlic, chillies, galangal and salam leaves until soft. Be careful not to have the oil too hot or the garlic will burn and taste bitter. Add the vegetables and stir-fry until lightly cooked but still crisp. Add soya sauce or salt to taste, and a splash of water or stock if you think you need it. Stir again and serve.
  2. You may add 100 g of sliced chicken or small prawns to this dish if you wish. Put it in before the vegetables.
  3. If you live in the tropics, try Tumis using shredded green pawpaw and raw peanuts. It is an especially good combination.
