Ingredients

1 cup thick coconut milk
500g beef round steak or topside
2 salam leaves
1/2 teaspoon palm sugar
salt, to taste
3 tablespoons vegetable oil

Paste spices

Quantity Ingredient
1 stalk lemongrass, finely sliced
1.5cm piece turmeric
or 1/8 teaspoon turmeric powder
1 thick slice fresh ginger
2 small garlic cloves, sliced
3 shallots, sliced
1 teaspoon ground coriander

Method

  1. In a mortar or a food processor attachment grind the spices to a paste then add the coconut milk and blend.
  2. Cut the meat into slices about 4 cm square and 1⁄2 cm thick. Beat them with a meat hammer to tenderise.
  3. Pour the coconut milk mixture into a wok. Add the salam leaves, palm sugar and salt and bring to the boil. Put in the meat slices and cook on medium heat, stirring all the time until the meat is tender and the dish is dry, the coconut milk having been absorbed or evaporated. Remove and keep aside.
  4. Wash and dry the wok. Heat the oil, add the meat slices and fry until brown and fragrant but not too dry. Drain on kitchen paper.
  5. Empal is a very good standby for everyday meals for busy families. It will keep well in the refrigerator for a few days covered in plastic wrap. Bring out what you need and warm it up in the microwave as an accompaniment to rice with a stir-fried vegetable or a vegetable sayur.
