Method

  1. The marinade for Sin Savanh is the same as the one above, except that it has 4 tablespoons sugar added to it. In this case the meat is sliced differently too – it is cut along the grain into 5 x 5 cm strips then across the grain into fine slices. Dry as before. After drying, the slices will deep-fry very quickly so you must be careful to remove them before they burn.
