Ingredients

Quantity Ingredient
1 cup vegetable oil, for deep-frying
4 tablespoons garlic, finely sliced
6 tablespoons shallots, finely sliced
5 large dried red chillies, seeded and broken into pieces
1 teaspoon shrimp paste
1/2 cup dried shrimps
2 tablespoons palm sugar
3 tablespoons tamarind water

Method

  1. Heat the oil in a wok to medium hot and fry the garlic until it is golden brown, remove and drain. Do the same with the shallots, and then the chillies, all separately, taking care not to burn them. Wrap the shrimp paste in foil and roast it in a dry pan or put it in a microwave for a minute. Grind the dried prawns finely.
  2. Combine all these ingredients in a food processor attachment and blend them together to a fine paste.
  3. Heat 3 tablespoons of oil in a pan or a wok and stir-fry the paste until it is well mixed and smells cooked and aromatic. Add the sugar and the tamarind water and fry until thick and well amalgamated. Cool and store in an airtight jar in the refrigerator. It keeps well.
