Stir-fried bamboo shoots

Ingredients

Quantity Ingredient
3 tablespoons oil
4 medium-sized garlic cloves, finely chopped
100g pork, thinly sliced
1 tablespoon fish sauce
pinch sugar
500g bamboo shoots, cut into 5 x 2 cm slices
3 capsicums, cut into 5 x 2 cm slices
1 spring onion, chopped
fresh coriander, with stems cut into 1 cm lengths

Method

  1. Heat the oil in a wok. Fry the garlic briefly, add the pork and stir-fry for 1 minute. Add fish sauce and sugar and stir, then add bamboo shoots and capsicum. Stir-fry for a further 5 minutes, adding more oil if necessary. Taste and adjust the seasonings. Add the spring onion and the coriander and serve.
