Stir-fried shredded bamboo shoots with egg

This is another common way to cook vegetables family-style.

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 medium-sized garlic cloves, chopped
2 cups shredded bamboo shoots or winged beans, sliced across thinly
1 large egg
2 teaspoons fish sauce

Method

  1. Heat the oil in a wok, add the garlic and stir-fry until golden. Add the vegetable and stir-fry until done. Break in the egg and stir everything together lightly until cooked, adding fish sauce to taste.
  2. Other vegetables may be cooked this way as well – shredded cabbage, ordinary beans or snakebeans in 2.5 cm lengths, young sliced zucchini (courgette) etc. In some cases, for example, the beans, you might need to add a splash of water and put on the lid for a few minutes. Make sure, however, that all the water has gone before you add the egg.
  3. In central Thailand up to 1 teaspoon sugar would be added as well as the fish sauce, but not elsewhere.
