Stir-fried snakebeans

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 garlic cloves, smashed and chopped
125g pork or chicken, sliced into 2.5 cm shreds
1-1 1/2 tablespoons fish sauce
sugar, to taste (optional)
3 cups snakebeans, cut into 2.5 cm lengths
1 brown onion, sliced lengthwise

Method

  1. Heat the oil in a wok. Stir-fry the garlic until it is golden, then add the pork until it changes colour. Add the fish sauce, sugar, snakebeans and onion, and stir. Cover the wok with a lid for a minute then take off the lid and stir-fry vigorously until everything is well mixed and cooked.
  2. Adding sugar to every recipe, and often by the teaspoonful, is characteristic of central Thai cooking. That this practice is given here as optional reflects my own preference for leaving it out.
