Stir-fried vegetables with prawns

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 garlic cloves, smashed and chopped
150g small raw prawns, shelled and deveined
1 brown onion, sliced lengthwise into rough strips
3 cups mixed vegetables, (see Note)
1 tablespoon fish sauce
pinch sugar, (optional)

Method

  1. Heat the oil in a wok. Add the garlic and then the prawns and stir-fry until cooked. Add onion and the vegetables – hardest ones first – stir-frying as you go. Add the fish sauce and sugar to taste and a splash of water if the dish seems dry.

Mixed vegetables

  • E.g. cauliflower or broccoli flowerets, baby corn, snowpeas, sliced red capsicum/bell peppers, beansprouts.
