Fresh noodles with greens and soya sauce

This is one of those dishes which tells you that you are in South East Asia. Introduced everywhere by overseas Chinese, it seems very much at home in the northern town of Nan, where this recipe comes from.

Ingredients

250g chinese broccoli stalks or young asparagus
3 tablespoons vegetable oil
350g fresh flat rice noodles
2 teaspoons dark soya sauce
2 garlic cloves, smashed and chopped
250g pork, sliced finely into 5 x 4 cm slices
1 teaspoon sugar
2 tablespoons yellow bean paste
2 tablespoons light soya sauce
1/2-2/3 cup stock or water
1 teaspoon sticky rice flour or cornflour, mixed with a little water

Method

  1. Peel the stalks of the Chinese broccoli and slice them diagonally into 2.5 cm strips. Drain. Heat 1–2 tablespoons oil in a wok, add the noodles and stir-fry for a minute. Add the dark soya sauce and stir-fry until they are well coated. Lift on to a serving plate and keep warm.
  2. Heat the rest of the oil in the wok until hot, put in the garlic and stir, then the pork and stir-fry until it changes colour. Add the broccoli and stir-fry until it is coated with oil and then add the sugar, the bean paste, the light soya sauce and as much stock or water as required to make a light gravy. Add the flour-water mixture and stir thoroughly until the gravy has thickened slightly and everything is cooked.
  3. Pour the contents of the wok over the noodles and serve.
  4. The regular practice in Thailand when serving noodles is to have condiments in separate bowls on the table so that diners may adjust their own flavours: Nam pla phrik (fish sauce with a few chopped bird’s eye chillies in it) and Phrik Pon (Thai ground chilli) together with some chopped fresh medium-sized chillies in vinegar (Phrik nam som) and some plain white sugar.
