Tossed dressed cucumber or crisp salad vegetables

Ingredients

Quantity Ingredient
250g cucumbers, seeded and sliced
or 250g mixed crisp vegetables, sliced, (see Note)
2 tablespoons sliced cooked prawns, or pork or crabmeat or ground dried prawns
1/2 red spanish onion, finely chopped
1-2 tablespoons lime juice
1-2 teaspoon sugar, to taste
salt
1-1 1/2 tablespoons fish sauce
pinch ground chilli, (optional)

Garnish

Quantity Ingredient
1 tablespoon fried garlic slices
sprigs mint or coriander leaves
chilli flowers

Method

  1. Place the cucumber or vegetables, prawns and onion in a salad bowl. Mix the lime juice, sugar, salt, fish sauce and ground chilli into a dressing and toss with the salad ingredients. Garnish with fried garlic, mint or coriander sprigs and chilli flowers.

Mixed crisp vegetables

  • E.g. cucumber, water chestnuts, radishes.
