Stir-fried beans with beef

Ingredients

Quantity Ingredient
400g french beans
200g lean beef
1 garlic clove, smashed and chopped
2 teaspoons fish sauce
salt, to taste
pepper, to taste
1-2 tablespoons oil
chopped coriander, for garnish

Method

  1. Wash the beans and either cut them across into 4 cm lengths or into fine diagonal slices the French way. Slice the meat into 5 x 1 cm strips and marinate it in the garlic, fish sauce, salt and pepper for 15 minutes.
  2. Heat the oil to high in a wok or a pan. Add the beans and stir-fry until coated. Put on the lid and allow to cook for 10 minutes until dark green but still crunchy, lifting the lid regularly and stirring to prevent burning. Take off the lid, add the beef and stir-fry until everything is cooked but not soft. Taste and adjust seasonings – you may care to add an extra splash of fish sauce during this final stage. Serve garnished with chopped coriander.
  3. The beans may also be cooked with pork or prawns, or a combination of both. Beansprouts or a mixture of vegetables may be cooked in the same way. Note, however, that beansprouts will take less time.
