Stir-fried beef with vegetables and pineapple

Ingredients

Quantity Ingredient
1/2 small sweet pineapple
1 young cucumber, 20 cm long
1 medium-sized white onion
4 small plants chinese celery
375g beef topside or silverside
2 garlic cloves, smashed and chopped
1 teaspoon sugar
salt, to taste
pepper, to taste
2 tablespoons seasoning sauce or light soya sauce
2 tablespoons vegetable oil

Method

  1. Peel the pineapple and remove the ‘toenails’ by cutting small diagonal wedges all the way around. Cut it into 6 wedges lengthwise, remove the hard core and slice each wedge diagonally into 5 cm long slices. Peel the cucumber, cut into four lengthwise, remove seeds and slice diagonally into 5 cm long slices. Peel and halve the onion lengthwise and cut into 3⁄4 cm wedges. Cut the stems of celery into 4 cm lengths and the leaves into 2.5 cm pieces.
  2. Put all the vegetables in separate piles on a big round tray or plate near the stove.
  3. Slice the beef into thin 5 x 5 cm slices across the grain. Make a marinade of half the garlic, sugar, salt and pepper and seasoning sauce and soak the meat in this.
  4. Heat 1 tablespoon oil in a wok and fry the rest of the chopped garlic. Add the pineapple, cucumber and onion then the celery (stalks only) and stir-fry until everything is lightly cooked and covered in oil. Add the celery leaves last and stir and mix until slightly wilted. Lift out and set aside.
  5. Heat the remaining oil to hot and stir-fry the beef slices until cooked. Put the pineapple and vegetables back in and mix. Adjust seasonings and serve.
