Stir-fried pork with vegetables

Ingredients

Quantity Ingredient
1 tablespoon fish sauce
1 garlic clove, smashed and chopped
pepper, to taste
pinch sugar
250g lean pork, thinly sliced
2 tablespoons oil
250g cauliflower, cut into slices 3 x 4 cm x 3 mm thick
100g baby corn, sliced into two lengthwise
1 medium brown onion, cut lengthwise into 8
chopped spring onion, for garnish

Method

  1. Mix fish sauce, garlic, pepper and sugar and marinate the pork in the mixture for 15 minutes. Heat 1 tablespoon oil in a wok, add the cauliflower and corn and stir-fry until coated. Add a good splash of water and cover for a few minutes then take off the lid and stir-fry well until all the water has disappeared and the vegetables are cooked but not soft. Lift out and keep aside.
  2. Heat another tablespoon oil in the wok. Put in the onion and stir-fry until coated with oil, then the meat and its marinade and stir-fry until done. Put the vegetables back in, add a splash of water and stir until everything is well mixed and heated through.
  3. Different meats and vegetables may be cooked in the manner of this recipe. Try prawns alone or in combination with pork, zucchini rounds and beansprouts, or a combination of green beans, carrots, cabbage, cauliflower or broccoli.
